These no-bake Chai-Spiced Date & Nut Bites (ਚਾਹ-ਮਸਾਲੇਦਾਰ ਖਜੂਰ ਅਤੇ ਗਿਰੀਦਾਰ ਸਨੈਕ) are simple, comforting, and satisfying. Made with Medjool dates (ਖਜੂਰ), almonds or cashews (ਬਦਾਮ, ਕਾਜੂ), sunflower seeds, and spices like cardamom (ਇਲਾਇਚੀ), ginger (ਸੁੰਢ), and cloves (ਲੌਂਗ), they come together in just a few minutes of hands-on time. The flavour is inspired by classic chai (ਚਾਹ) and pantry spices, giving these bites a warm and cozy feel.

They’re soft, chewy, lightly spiced, and provide fibre and healthy fats — making them a great option for snacks, lunchboxes, or something easy to keep in the fridge during busy weeks.

Here’s what you’ll need for this recipe:

Medjool Dates (ਖਜੂਰ): Help bind the mixture together while adding natural sweetness, fibre, and potassium. They also create a soft, fudgy texture.

Almonds (ਬਦਾਮ) or Cashews (ਕਾਜੂ): Add healthy fats, plant-based protein, and texture. Almonds give a slightly nuttier flavour, while cashews create a softer, creamier bite.

Sunflower Seeds: Add extra texture along with healthy fats, vitamin E, and minerals.

Shredded Coconut: Adds subtle sweetness and texture while helping balance the spice flavours.

Cardamom Powder (ਇਲਾਇਚੀ): The main warming spice in this recipe. Cardamom gives these bites their chai-inspired flavour and pairs beautifully with dates.

Ginger Powder (ਸੁੰਢ): Adds warmth and depth while balancing the sweetness of the dates.

Ground Cloves (ਲੌਂਗ): Adds warmth and richness to the spice blend.

Cinnamon (ਦਾਲਚੀਨੀ): Adds sweetness and warmth.

Salt: Helps balance and enhance the flavours.

Maple Syrup (optional): Optional if your dates are not as sweet or soft.

You’ll also need:

  • Food processor
  • Measuring cups and spoons
  • Spatula or spoon
  • Airtight container for storage

  1. Pulse the nuts: Add almonds (or cashews), sunflower seeds, and coconut to a food processor. Pulse until the mixture resembles coarse crumbs. Avoid over-processing into nut butter.
  2. Add remaining ingredients: Add the pitted dates, cardamom, ginger, cloves, cinnamon, salt, and maple syrup if using.
  3. Blend: Process until the mixture becomes sticky and starts clumping together. The mixture should hold together easily when pressed between your fingers. If it feels too dry, add 1–2 more soft dates. If too sticky, add a spoonful of nuts or seeds.
  4. Roll into bites: Scoop about 1 tablespoon of mixture and roll into small balls.
  5. Optional coating: Roll in crushed nuts or shredded coconut for extra texture and flavour.
  6. Chill: Refrigerate for about 30 minutes until slightly firm.

  • Soft Medjool dates work best for texture.
    • If your dates feel dry, soak them in warm water for 5–10 minutes first.
  • The spice level is intentionally subtle and balanced.
  • Store chilled for the best texture.
    • Fridge: 1-2 weeks

  • 1 tbsp unsweetened shredded coconut
  • 1/4 tsp cardamom powder
  • 1/4 tsp ginger powder
  • 1/8 tsp ground cloves
  • 1/8 tsp cinnamon
  • 1/8 tsp salt
  • 1/2 tbsp maple syrup (optional)

Directions
