Dry Ingredients

  4. Mix the wet ingredients: In a separate bowl, whisk together the oil, milk, vanilla, apple cider vinegar, brown sugar, and prepared flax mixture.
  5. Combine: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing.
  6. Fold in apples and walnuts: Gently fold in the chopped apples and walnuts until evenly distributed.
  7. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for about 45 minutes, or until a toothpick inserted into the centre comes out clean. Avoid overbaking to help keep the loaf moist.
  8. Cool: Allow the loaf to cool in the pan for 10–15 minutes before transferring to a cooling rack.
  9. Add optional glaze: If using the glaze, whisk together icing sugar, cinnamon, and milk until smooth, then drizzle or spread over the cooled loaf.

  • Do not overmix the batter—this helps keep the loaf soft and tender.
  • Finely chopping the apples helps them distribute evenly throughout the loaf.
  • Sprinkle a few chopped walnuts on top before baking for extra texture.
  • The loaf tastes even better the next day once the flavours settle.
  • Store leftovers in an airtight container at room temperature for 2–3 days or refrigerate for longer freshness.

Ingredients

    Loaf
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup oil
  • 1 cup milk of choice
  • 1 tsp vanilla
  • 1 tbsp apple cider vinegar
  • 1 tbsp ground flax
  • 3 tbsp water
  • 6 tbsp brown sugar
  • 1 1/2 cups apple, finely chopped (I used honey crisp)
  • 1/3 cup walnuts, chopped
  • Optional Glaze:
  • 1/2 cup icing sugar
  • Pinch of cinnamon
  • 1 tbsp milk of choice

Directions

  1. Preheat oven to 350°F.
  2. In a small bowl, mix together flax and water. Let sit. In a separate bowl, combine flour, baking soda, baking powder, salt, and spices. Whisk together. In a third bowl, combine oil, milk, sugar, vinegar, vanilla, and flax mixture. Whisk together.
  3. Combine dry and wet ingredients and stir to combine. Avoid over-mixing.
  4. Fold in apples and walnuts.
  5. Pour batter into lined or greased loaf pan and bake for 45 min or until toothpick comes out clean.
  6. Allow the loaf to cool and then add the optional glaze!
  7. Optional glaze: Mix together icing sugar, cinnamon, and milk until smooth. Spread on top of loaf.
