Apple Walnut Loaf

You'll Fall in love with this yummy loaf!
Ingredients
- 2 cups whole wheat flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/3 cup oil
- 1 cup almond milk (or other milk of choice)
- 1 tsp vanilla
- 1 tbsp apple cider vinegar
- 1 tbsp ground flax
- 3 tbsp water
- 6 tbsp brown sugar
- 1 1/2 cups apple, finely chopped (I used honey crisp)
- 1/3 cup walnuts, chopped
- Optional glaze: 1/2 cup icing sugar, pinch of cinnamon, 1 tbsp milk of choice
Directions
- Preheat oven to 350°F.
- In a small bowl, mix together flax and water. Let sit. In a separate bowl, combine flour, baking soda, baking powder, salt, and spices. Whisk together. In a third bowl, combine oil, milk, sugar, vinegar, vanilla, and flax mixture. Whisk together.
- Combine dry and wet ingredients and stir to combine. Avoid over-mixing.
- Fold in apples and walnuts.
- Pour batter into lined or greased loaf pan and bake for 45 min or until toothpick comes out clean.
- Allow the loaf to cool and then add the optional glaze!
- Optional glaze: Mix together icing sugar, cinnamon, and milk until smooth. Spread on top of loaf.
