Crêpes
Milk of Choice: Helps create a smooth batter and soft crêpe texture. Use any milk you enjoy, such as soy, oat, almond, or dairy milk if preferred.

Steps
- Prepare the filling: In a frying pan over medium heat, add the oil and onions. Cook for several minutes until softened.
- Cook the vegetables: Add the mushrooms, salt, paprika, black pepper, and seasoning blend. Cook for a few more minutes until the mushrooms soften and release moisture.
- Add the spinach: Stir in the spinach and cook until wilted. Remove the pan from heat and allow the mixture to cool slightly.
- Prepare the crêpe batter: In a large bowl, whisk together the milk, flour, oil, and salt until smooth.
- Cook the crêpes: Lightly grease a frying pan and heat over low to medium heat. Pour approximately 3–4 tablespoons of batter into the pan, swirling immediately to create a thin, even layer. Cook until the bottom is lightly golden, then gently flip the crêpe.
- Add the filling: On one half of the cooked crêpe, add a slice of cheese if using and approximately 1/4 cup of the vegetable filling. Fold the other side of the crêpe over the filling to close.
- Finish cooking: Cook for another minute or two on each side until lightly golden and warmed through.
- Serve and enjoy: Serve warm with your favourite sides such as roasted potatoes, salad, or fresh fruit.

Ingredients
- Crêpes
- 1 1/2 cups milk of choice
- 1 cup flour
- 2 tbsp oil
- 1/2 tsp salt
- Butter or oil for greasing Filling
- 1-2 tsp oil
- 1 small onion, diced
- 1 cup mushroom, diced
- 2 cups spinach, chopped
- 1/4 tsp salt
- 1/2 tsp paprika
- 1/2 tsp pepper
- 1 tsp choice of salt-free seasoning
- Optional: cheese slices
Directions
- Prepare Crêpes Filling
- In a pan on medium heat, add oil and onions and cook for a few minutes.
- Add in mushrooms and spices and cook for another few minutes, until mushrooms have cooked down.
- Add in spinach and once it starts to wilt, remove pan from heat.
- Stir mixture until it cools down a bit or transfer into a bowl. Prepare Batter
- Whisk together ingredients for crêpe batter until smooth. Prepare Crêpes
- In a lightly greased frying pan on low to medium heat, add ~3-4 tbsp of batter and swirl the batter around to evenly and thinly coat the pan.
- After a few minutes, when bottom is light brown, flip the crêpe.
- On the cooked part of the crêpe, add a slice of cheese and ~1/4 cup of vegetable mix on one side of the crêpe.
- Flip the other side over to close the crêpe in half.
- Once the bottom is light brown, flip the crêpe to cook the other side.
- Serve with your choice of side like roasted potatoes.
