Rice Crispy Squares

If you’re looking for a quick and satisfying homemade treat, this Rice Crispy Squares recipe is a great one to keep on hand. Made with just a few pantry staples, the squares come together in minutes and are perfect for snacks, lunchboxes, or an easy dessert.

Unlike traditional rice crispy squares made with marshmallows, this version uses peanut butter and honey or maple syrup to help bind everything together while adding richness and flavour. The optional chocolate topping adds an extra layer of sweetness that pairs perfectly with the nutty base.

These squares are easy to customize, freezer-friendly, and great for when you want something simple, nostalgic, and satisfying.

Here’s what you’ll need for this recipe:

Crispy Rice Cereal: The base of the recipe that gives these squares their classic crispy texture and light crunch.

Peanut Butter: Adds richness, flavour, and helps bind the squares together while contributing plant-based protein and healthy fats. Also helps create a smoother, softer chocolate topping that spreads more easily.

Honey or Maple Syrup: Provides sweetness and helps hold the mixture together. Maple syrup keeps the recipe fully plant-based.

Vanilla (Optional): Adds warmth and enhances the flavour of the squares.

Chocolate Chips (Optional): Adds a layer of chocolate flavour that pairs well with the peanut butter base.

You’ll also need:

  • Large mixing bowl
  • Small saucepan or microwave-safe bowl
  • Spatula or wooden spoon
  • Measuring cups and spoons
  • 8×8 baking pan or container
  • Parchment paper

  1. Prepare the pan: Line an 8×8 pan or container with parchment paper and set aside. Pour the rice cereal into a large mixing bowl.
  2. Melt the peanut butter mixture: In a small saucepan over low heat, combine the peanut butter, honey or maple syrup, and vanilla if using. Heat gently until smooth and just melted.
  3. Combine with the cereal: Pour the peanut butter mixture over the rice cereal and mix until evenly coated.
  4. Press into the pan: Transfer the mixture into the prepared pan and gently press it down into an even layer using a spatula or the back of a spoon.
  5. Prepare the optional topping: If using the topping, melt the chocolate chips and peanut butter together on the stovetop or in the microwave until smooth.
  6. Add the topping: Spread the melted chocolate mixture evenly over the squares.
  7. Chill and slice: Place the squares in the freezer for 25–30 minutes, or until firm. Slice into squares and enjoy.

  • Use maple syrup instead of honey to keep the recipe vegan.
  • Avoid overheating the peanut butter mixture, as this can make the squares harder once chilled.
  • Store leftovers in the refrigerator or freezer for best texture.
  • Feel free to customize these squares with additions like chopped nuts, hemp hearts, shredded coconut, or mini chocolate chips.

Ingredients

  • 3 cups rice cereal (finely puffed)
  • 3/4 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla (optional)
  • Topping (optional)
  • 1/2 cup semi-sweet chocolate chips
  • 1 tbsp peanut butter

Directions

    Squares
  1. In a large bowl, pour in dry cereal. Line an 8×8 pan with parchment paper.
  2. In a saucepan, melt the peanut butter, honey, and vanilla on low heat, just until melted.
  3. Pour the peanut butter and honey mixture into the cereal.
  4. Mix until incorporated.
  5. Pour mixture into an 8×8 pan and pat down.
  6. Add in optional topping (below), if you wish.
  7. Put the squares into the freezer for at least 25-30 minutes before cutting into squares.
  8. Topping (optional)
  9. Melt on stovetop or in microwave until just melted.
  10. Spread on top of rice crispy treats and refrigerate or freeze until ready to serve.
