They’re soft and chewy from the peanut butter and maple syrup, lightly crisp from the puffed rice cereal, and finished with chopped peanuts for subtle crunch. Not overly sweet, not overly firm — just textured, snackable, and easy to keep in the fridge or freezer for when you want something simple.

Here’s what you’ll need for this recipe:

Puffed Rice Cereal: Provides light, airy crunch without heaviness. It keeps the clusters crisp while still chewy.

Natural Creamy Peanut Butter (Unsalted): The base that holds everything together. Adds plant-based protein, satisfying fats, and rich peanut flavour.

Maple Syrup: Naturally sweetens and helps bind the mixture.

Vanilla Extract: Rounds out the flavour and enhances sweetness.

Salt: Balances the sweetness.

Unsweetened Shredded Coconut: Adds subtle texture and chew without overpowering.

Chopped Peanuts: Boost crunch and reinforce the peanut flavour.

Chocolate Chips (Optional): Adds a light sweetness, if you prefer.

  1. Warm the wet ingredients: In a small saucepan over low heat, gently warm the peanut butter and maple syrup until smooth and runny. Remove from heat and stir in the vanilla and salt.
  2. Mix the dry ingredients: In a large bowl, combine the puffed rice cereal, shredded coconut, and chopped peanuts.
  3. Combine: Pour the warm peanut butter mixture over the dry ingredients. Stir until evenly coated and sticky. Let the mixture sit for about 1 minute to slightly soften the cereal.
  4. Roll into bites: Using your hands or a small scoop (about 2 tablespoons each), roll into bite-sized balls. Place on a parchment-lined tray.
  5. Optional chocolate drizzle: Melt chocolate chips and lightly drizzle over the clusters while they’re on the tray.
  6. Freeze to set: Freeze for 20–30 minutes until firm. If they feel too firm straight from the freezer, let sit at room temperature for 5 minutes before eating.

  • If the mixture feels very sticky while rolling, lightly dampen your hands.
  • For slightly softer bites, store in the fridge instead of the freezer.

Directions
