These Masala Roasted Potatoes are simple, but always a hit. Golden on the outside, soft on the inside, and coated in cozy masala spices — they work just as well as a quick snack, an easy side, or something to nibble on.

Here’s what you’ll need for this recipe:

Potatoes (ਆਲੂ): The base of the dish. Roast up tender inside and crisp on the edges.

Avocado Oil: Helps the potatoes roast evenly and get crispy.

Garam Masala (ਗਰਮ ਮਸਾਲਾ): Adds warm, comforting flavour without heat.

Salt: Enhances the flavour of the potatoes and spices.

Black Pepper: Adds mild heat and balance.

Ground Cumin (ਜੀਰਾ): Earthy and warming spice.

Ground Coriander (ਧਨੀਆ): Light note that keeps the spices balanced.

Turmeric (ਹਲਦੀ): Adds colour and subtle earthiness.

Garlic Powder: Savoury depth without burning.

Cayenne (optional): For a touch of heat.

Lemon Juice (optional): Brightens everything at the end.

You’ll also need:

  • Large mixing bowl
  • Baking sheet
  • Parchment paper
  • Knife + cutting board
  • Oven (or air fryer)

  1. Preheat the oven: Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Season the potatoes: Add cubed potatoes to a large bowl. Drizzle with oil, then sprinkle over all the spices and salt. Toss well until every piece is coated.
  3. Spread and roast: Spread potatoes in a single layer on the baking sheet, leaving space between pieces.
  4. Bake: Roast for 30–35 minutes, flipping halfway, until golden and crisp on the edges.
  5. Finish: Remove from the oven. Squeeze over a little lemon juice if using and finish with chopped cilantro.

  • For extra crispiness: Make sure the potatoes are dry before tossing with oil and don’t overcrowd the tray.
  • Spice level: Keep cayenne light heat, or bump it up if you like more spice.
  • Serving ideas: These pair beautifully with yogurt, chutney, or even tucked into a wrap.
  • Air fryer option: works great when you want them fast
    • Preheat air fryer to 380°F
    • Cook for 18–22 minutes, shaking halfway through
    • Potatoes should be crisp, golden, and cooked through

  • 1 tbsp avocado oil
  • 1/2 tsp garam masala
  • 1/4 tsp salt
  • 1/8 tsp cayenne (adjust to taste)
  • 1/8 tsp ground coriander
  • 1/4 tsp black pepper
  • 1/4 tsp turmeric
  • 1/4 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/2 tsp lemon juice (optional)

Directions
