Fragrant cumin rice with tender peas — simple, delicious, and easy as can be.

There’s something grounding about a humble pot of rice (ਚੌਲ). No complicated steps, no long ingredient list — just the comfort of something reliable.
This Jeera Parboiled Rice is light, aromatic, and one of those forgiving recipes that quietly does its job well. Cumin (ਜੀਰਾ) and cloves (ਲੌਂਗ) add gentle warmth, peas (ਮਟਰ) bring a touch of sweetness, and parboiled rice gives you fluffy, separate grains with ease.
It’s the kind of everyday rice that works with everything — alongside daal, sabji, curries, or even just with a spoonful of yogurt.

Ingredients
Here’s what you’ll need for this recipe:
Parboiled Rice (ਚੌਲ): Parboiled rice is rice that has been partially boiled in its husk before milling. During this process, heat and steam push many nutrients from the outer bran layer into the grain itself. Parboiled rice cooks up firm and fluffy with separate grains — making it much less likely to turn mushy.
Avocado Oil (or Neutral Oil): Helps toast the cumin and lightly coat the rice for better texture and flavour.
Cumin Seeds (ਜੀਰਾ): The star of jeera rice. When toasted in oil, they release a warm, earthy aroma that defines the dish.
Cloves (ਲੌਂਗ): Add subtle depth and warmth without overpowering the cumin.
Salt: Enhances flavour and balances the natural sweetness of the peas.
Water: Allows the rice to cook evenly and absorb flavour as it steams.
Green Peas (ਮਟਰ): Bring a touch of sweetness, colour, and a small boost of plant-based protein and fibre.

Kitchenware
You’ll also need:
- Medium saucepan or pot with tight-fitting lid
- Measuring cups and spoons
- Fine mesh sieve
- Fork
Steps
- Rinse the rice: Rinse under cool water until the water runs mostly clear. Set aside.
- Bloom the spices: Heat oil in a saucepan or pot over medium heat. Add cumin seeds and cloves. Let them sizzle for 20–30 seconds until fragrant. Toast gently and do not let them burn.
- Toast the rice: Add the rinsed rice to the saucepan or pot. Stir for 2–3 minutes on medium heat to lightly toast the grains.
- Add liquid: Add salt and water. Stir once.
- Bring to a boil: Increase heat to high and bring to a rolling boil.
- Add peas and simmer: Once boiling, add the peas. Reduce heat to low, cover, and cook for around 15 minutes without stirring.
- Rest: Turn off heat and let sit covered for 5 minutes. Let the rice rest before fluffing.
- Fluff: Gently fluff with a fork before serving.
