This Cookie Butter Granola is cozy, crisp, and made with pantry staples like oats, nuts, seeds, and coconut. It’s gently baked until golden, then finished with a swirl of melted cookie butter for that warm, delicious flavour.
It’s amazing sprinkled over yogurt, paired with fruit, or eaten straight off the tray. Plus, it’s easy to customize and comes together in no time.

Maple Syrup: Sweetens and helps bind the granola.
Peanut Butter: Adds flavour, richness, and helps bind the granola.

Salt: Balances the sweetness and brings out flavour.

Steps
- Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, mix together the rolled oats, chopped almonds, sunflower seeds, shredded coconut, cinnamon, and salt.
- In a small bowl, whisk together the olive oil, maple syrup, melted peanut butter, and vanilla extract.
- Pour the wet mixture over the dry ingredients and stir well until everything is evenly coated.
- Spread the mixture in an even layer on your prepared baking sheet.
- Bake for 20–25 minutes (stirring once halfway through as needed) until lightly golden and fragrant.
- Remove from the oven and, while the granola is still warm, gently stir in the melted cookie butter.
- Let the granola cool completely on the pan — the granola will crisp up as it cools.
- Once cooled, serve or store in an airtight container.

Tips & Notes
- Store in an airtight container at room temperature for up to 5-7 days, or in the fridge for up to 2-3 weeks.
- To form granola clusters:
- Increase maple syrup to 1/3 cup (granola will be slightly sweeter)
- Press granola firmly into the pan before baking
- Do not stir during baking
- Let it cool completely before breaking into clusters
- For a stronger cookie butter flavour:
- Stir in an additional 1-2 tbsp of cookie butter after baking
- To make it nut-free:
- Swap almonds and peanut butter for pumpkin seeds and sunflower seed butter.

- 2 tbsp olive oil
- 1/4 cup maple syrup
- 2 tbsp peanut butter, melted
- 3/4 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 2 tbsp cookie butter, melted (added after baking)
Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
