Aloo Tikki Waffles

A crispy, savoury waffle inspired by classic aloo tikki.

Aloo tikki (ਆਲੂ ਟਿੱਕੀ) is a classic comfort food, known for its crispy exterior and soft, spiced centre. These Aloo Tikki Waffles take those familiar flavours and give them a fun twist by cooking them in a waffle iron instead of pan-frying.

Made with potatoes (ਆਲੂ), chickpeas (ਛੋਲੇ), warm spices like cumin (ਜੀਰਾ), and fresh cilantro (ਧਨੀਆ), these waffles are savoury, satisfying, and surprisingly simple to make. They’re delicious served with chutney or your favourite sauce, and work well for breakfast, lunch, or as a snack.

Here’s what you’ll need for this recipe:

Potatoes (ਆਲੂ): Form the base of the waffles, providing structure and that classic aloo tikki texture once mashed.

Chickpeas (ਛੋਲੇ): Add body and plant-based protein, helping the waffles hold together while staying soft inside.

Chickpea Flour (ਬੇਸਨ): Acts as a natural binder and adds a subtle nuttiness.

Onion: Adds savoury depth and flavour once lightly sautéed.

Ginger (ਅਦਰਕ) & Garlic (ਲਸਣ): Bring warmth and aroma that build flavour without overpowering.

Cilantro (ਧਨੀਆ): Adds freshness and balances the spices.

Lemon Juice: Brightens the mixture and lifts the flavours.

Spices: Cumin (ਜੀਰਾ), coriander (ground ਧਨੀਆ), and cayenne provide warmth, earthiness, and gentle heat.

Olive Oil: Used to sauté the aromatics and prevent sticking.

Salt: Enhances overall flavour.

Water: Added sparingly to help the mixture come together if needed.

You’ll also need:

  • Medium pot (for boiling potatoes)
  • Small pan or skillet
  • Mixing bowl
  • Fork or potato masher
  • Measuring spoons
  • Waffle iron
  • Silicone brush or paper towel (for greasing)

  1. Prepare the Aromatics
    • Heat olive oil in a small pan over low-medium heat.
    • Add onion, ginger, and garlic. Sauté until softened and fragrant, not browned.
    • Add 1 tsp of water if needed to prevent sticking. Set aside.
  2. Make the Mixture
    • In a large bowl, combine the boiled potatoes, chickpeas, besan, cilantro, lemon juice, onion mixture, salt, cumin, coriander, and cayenne.
    • Mix until fully combined. Add up to 1 tsp of water if the mixture seems dry.
  3. Cook the Waffles
    • Preheat and lightly grease your waffle iron.
    • Divide the mixture evenly into 4 portions and shape into thick discs.
    • Place one portion into the waffle iron and cook until golden and crisp on the outside (on a Cuisinart waffle iron, this was around level 4–5).
    • Remove carefully and let rest briefly before serving.

  • Don’t overcook the aromatics: Keep them soft, not browned, to avoid bitterness.
  • Consistency matters: The mixture should be firm but not dry — add water sparingly.
  • Crispier waffles: Let the waffles cook fully and avoid opening the waffle iron too early.
  • Serving ideas: Serve with mint chutney, tamarind chutney, yogurt, or your favourite sauce.
  • Storage: Best enjoyed fresh, but leftovers can be refrigerated and reheated in a toaster oven or pan.

  • 2 medium white/yellow potatoes, peeled, chopped, and boiled (~2 cups)
  • 1/2 cup cooked chickpeas
  • 2 tbsp chickpea flour
  • 6 tbsp minced cilantro
  • 1 tsp lemon juice
  • 1/4 cup finely minced onion
  • 1 tsp finely minced ginger
  • 1 tsp finely minced garlic
  • 1 tsp olive oil
  • 1 tsp water (as needed)
  • 1/2 tsp + 1/8 tsp salt
  • 1/2 tsp cumin powder
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
