Vegan rice crispy treats with a spooky twist!

In honour of the spookiest day of the year, here are some vegan Halloween Rice Crispy Treats! Simple, easy, and delicious- these treats are the perfect addition to any Halloween party or night in!

Ingredients
Here’s what you’ll need for this recipe:
Crispy rice cereal
Peanut butter
Maple syrup
Vanilla extract
Vegan white chocolate chips
Vegan chocolate chips
Candy decorations

Kitchenware
You’ll also need:
- Measuring cups/spoons
- Mixing bowls & spoons
- Baking sheet
- Silicone liner or parchment paper
- Knife

Steps
- In a large bowl, pour in the dry rice cereal.
- In a saucepan or microwave, melt the peanut butter. Stir in the maple syrup and vanilla and mix until the mixture is thick & creamy.
- Pour the peanut butter and syrup mixture into the cereal. Stir until the cereal is coated.
- Pour the cereal mixture into an 8×8 pan lined with parchment paper and press down until flat.
- Put the mixture into the freezer for at least 30 minutes before cutting.
- Right before removing the mixture from the freezer, separately melt the white chocolate chips and chocolate chips in small bowls.
- Remove the treats from the freezer and cut into 12 rectangles.
- Top the treats as you desire using the melted chocolate and candy decorations!
- Enjoy!

Tips & Notes
Storage: You can store these in the freezer for months, but they never last that long in our house. I also think they taste best straight out of the freezer!
Substitutions: I find these treats turn out best with the delicate crispy rice cereal that you would traditionally find in the cereal aisle, rather than the larger, puffed rice cereal.
