Made from just 8 simple plant-based ingredients, these cookie dough bites are energizing and satisfying!

I LOVE cookie dough. Something about the sweet and salty mix can’t be beat for me. So much so that, if there is any talk of dessert, everyone knows that I’ll almost always choose the cookie dough option. So, when cookie dough cravings hit and I’m either not up for making traditional cookie dough (it sometimes feels like way too much work), in-store options aren’t available that fit my dietary preferences, and/or I’m looking for something that will double as a nutritious snack, I want something that’s easy to make without sacrificing on taste.
Enter these No-Bake Cookie Dough Bites! These are not only satisfying but also pack in nutrients like protein, fibre, and healthy fats. They’re not just amazing for when cravings hit but also when energy levels dip. Enjoy them while watching your favourite TV show (The Office anyone?) or during your busiest days on-the-go!

Here’s what you’ll need for this recipe:
Vegan Protein Powder: Adding a protein source to snacks can help manage hunger in between meals, keep us full for longer, and meet our protein needs for the day. Aside from contributing to the flavour a bit, you would never really know these bites had protein powder. Just choose a protein powder flavour that you enjoy. I went with vanilla!
Almond Flour & Butter: I really enjoy the flavour profile of almond flours and butters, especially in no-bake recipes. Almonds are a great source of fibre, protein, healthy fat, magnesium, and antioxidants like vitamin E.
Plant-Based Yogurt: The yogurt here helps produce the chewy and soft texture of these bites. I went with a vanilla oat yogurt, but any yogurt of your choosing will do just fine.
Chocolate Chips: Can you even have cookie dough without chocolate chips? I mean you could, but it’s so much better with chocolate in my opinion! If you’re really not a fan, feel free to swap out the chocolate chips for other add-ins of your choosing like white chocolate chips (I consider them another category hehe) or dried fruit.
Maple Syrup: It may be the Canadian in me, but maple syrup is by far my favourite sweetener. I love its essentially neutral flavour in recipes like these (I usually opt for Grade A, Light or Medium Amber) and it doesn’t hurt that it also adds in some antioxidants!
Vanilla Extract: Vanilla extract helps boost the flavour of these bites, but feel free to omit or add in another extract of your choosing.
Salt: Since the almond butter I used was unsalted, I added a bit of salt to balance out the sweet and produce the optimal sweet and salty combo of traditional cookie dough.

You’ll also need:
- Measuring cups/spoons
- Mixing bowl
- Tray/storage container

Steps
These bites should be found under ‘easy-to-make’ in the dictionary given how, well, easy they are to make. Simply add all of your ingredients to a bowl and mix well. I find mixing the dough with my hands gives me the most even texture. Then roll your desired amount of dough into balls and enjoy! Yup, that’s it.

Tips & Notes
Storage: These will stay fresh for a few days in the fridge. They may stay fresh longer, but I like to freeze whatever I don’t plan on eating after 3-4 days to maximize freshness. I would suggest freezing them if you are preparing larger batches for easy grab-and-go. P.S. be sure to let them thaw a bit before diving in!
Substitutions: Feel free to choose your preferred protein powder, nut butter, nut-based flour (even oat flour), plant-based yogurt, liquid sweetener, and chocolate chips!

No-Bake Cookie Dough Bites

Made from just 8 simple plant-based ingredients, these cookie dough bites are energizing and satisfying!
Ingredients
- 1 cup almond flour
- 1/4 cup vegan vanilla protein powder
- 1/3 cup almond butter, unsalted
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1-2 tbsp plant-based yogurt
- 1/3 cup chocolate chips, chopped
Directions
- Mix all the ingredients in a bowl to form a crumbly dough.
- Scoop a palmful (or other desired amount) of cookie dough into your hands and roll into balls.
- Bites may be eaten immediately or refrigerated for later.
- Enjoy!
