Eggless Waffles

A delicious breakfast treat that's nutritious and eggless!


Ingredients

    Dry
  • 1 cup whole wheat flour (or all-purpose flour)
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 1/2 tsp brown sugar
  • Optional: 1/2 cup protein powder
  • Wet
  • 1 tbsp ground flax + 3 tbsp water
  • 1/2 tsp vanilla
  • 3/4 cup + 2 tbsp “milk” of choice (e.g., dairy or almond)
  • 1 tbsp apple cider vinegar
  • 2 tbsp almond “butter”
  • 2 tbsp vegan “butter”
  • Vegan or dairy butter for greasing

Directions

  1. Preheat waffle iron.
  2. In a small bowl, combine ground flax and water. Let sit for 5 minutes.
  3. In a separate bowl, combine flour, baking powder, protein powder (if adding) and salt.
  4. In a third bowl, combine milk and vinegar. Let sit for a few minutes. Add vanilla, melted butter, and sugar.
  5. Combine flax mixture with wet ingredients.
  6. Combine wet and dry ingredients and mix until batter is smooth.
  7. Pour desired amount of batter into greased waffle iron and cook until desired texture. (This will vary based on your waffle maker).
  8. Enjoy with your favourite toppings!
