No-Bake Energy Bites

No-bake bites packed with protein, fibre, and healthy fats!


Ingredients

  • 3/4 cup oats
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup almonds
  • 1/4 cup hemp hearts
  • 1 1/2 cup Medjool dates, pitted (~20 medium-sized dates)
  • 1/2 cup peanut butter
  • 3 tbsp cocoa powder
  • 1 tsp vanilla
  • 1/4 cup chocolate chips

Directions

  1. Add oats, nuts, chocolate, and seeds into a food processor and pulse until fine and crumbly.
  2. Add dates, peanut butter, cocoa powder, and vanilla. Pulse until smooth mixture start clumping together.
  3. Transfer mixture to pan of choice and press down to flatten. Alternatively, make energy balls by rolling the mixture into bite-sized balls.
  4. Refrigerate for an hour before cutting into squares.
  5. Note: If you store Medjool dates in the fridge or if they seem dry, soak them in hot water for about ten minutes to soften. Note: For longer-term storage, store bars in freezer!
